The point of the scissors, most basically, is to show Edward is *not* like everyone else.

More philosophically, if we think about how important the sense of touch is in interpersonal relationships, we can see Edward's lack of proper hands means he is not able to emotionally connect with other people. Also if he tries to connect (touch) with someone, he could easily hurt that person on accident. I think there are a lot of lonely people that can identify with that.

In the computer world scissors often mean the Cut function. In the real world the symbol usually refers to sewing and needlecraft.
