The author, Charlaine Harris answered this question on her website. She gave a resounding no. So, to answer your question, the author claims that Sookie doesn't become a vampire in her series.......BUT given that some things in the TV series aren't totally canon with the books, it's hard to tell. She may, she might not.

He gets turned into a were-panther in the books, not sure about the tv series yet though.
