Eat your words is a response to someone bragging or a an over optimistic prediction. Example; Your team is so bad we are going to beat you by 20 points. The response could be, I'm going to make you eat those words. It voices disagreement and a challenge.

It means to be forced to take back an earlier statement because the statement was proven false or otherwise incorrect. For example, if you were to call someone a coward and they turn out to do something singularly brave, then this idiom would apply as you would be forced to take back or "eat" the earlier statement about cowardice.
