What episodes do you really see the love between Ciel and Sebastian?

I don't know that you ever really see 'love' between them. Merely Ciel's neediness for Sebastian's presence, and Sebastian's reassurance that he is forever Ciel's faithful butler until the day that their contract is complete and he can devour Ciel's soul.

if you are talking about when they left the in the cart (there are spoilers) then he talked about why sebastian stabbed ciel and ciel said is it because you wanted to kill me before he became a demon but sebastian said no it was because he wanted to check if ciel was really a demon. they also talked about why sedastian still serves ciel, it was because before he became a demon he ordered sebastian to stay his butler until ciels soul is eaten because of that sebastian is now his butler forever hope that helped (sorry for my poor english)

Why Sebastian didn't get the soul of ciel phantomhive?
No. Unfortunately for Sebastian, during the battle with Angela/Ash his arm that contained the seal for his contract with Ciel was torn off, thus voiding the contract between the two. This gave another demon Claude Faustus, the chance to steal Ciel's soul leaving him in a comatose like state. (by taking his ring I'm assuming) Later when Sebastian is able to retrieve Ciel's ring from the Trancy household (Alois Trancy and his butler Claude Faustus) Sebastian is able to revive Ciel, however, Ciel has no memory prior to the incident and remembers nothing of the revenge against Angela/Ash and the Queen. So in order for Sebastian to consume his soul, Sebastian must help Ciel take revenge again. However, Sebastian is not the only one after Ciel's soul, Claude is also looking to devour Ciel's soul, So Sebastian and Claude decide on an agreement that will make Alois Trancy (Claude's current master) the Target of Ciel's revenge (Their doing this to prepare Ciel's one of a kind soul to fit their appetite which will be even better when Ciel has completed his quest for revenge). When the revenge is completed either butler will have the chance of devouring Ciel's soul.

Is Sebastian evil from kuroshitsuji?
Yes AND no. Sebastian, as a demon, is usually thought of as evil. Though he helps the series' main protangonist, Ciel, he is also seen as good. Sebatian seems to enjoy humans' way of living, but really humans themselves. And since he wants to take Ciel's soul (as that is the reason he is Ciel's butler), he is marked as evil. It is up to the viewer to interpret him.
