All would depend on how long you plan to stay in the desert away from a town or city. If it is just a brief visit of a few hours, just some healthy snacks would be fine. For a longer visit, especially if you are backpacking, dehydrated meals are available that are nutritious and weigh little. They only require hot water to rehydrate them for eating. Three meals per day per person plus sufficient water would be required.
Alaska has no major true desert areas but if it did, they would be much colder than Arizona.
Meerkats live in all parts of the Kalahari Desert in Botswana, in much of the Namib Desert in Namibia and southwestern Angola, and in South Africa.

Armadillos would not survive a long time in a desert as they avoid it. They much prefer grasslands where it is cooler and a better supply of water and food.
The desert has plenty of insects and arthropods that are food for many lizards. Much of the water needed by the lizard is in the food they eat.
They pretty much get by on their own
The implication of a desert region is that not much grows there. I am not aware that Europe has a seriously desert region.

Armadillos,at least in North America, avoid the desert and much prefer grasslands and scrub where food is more plentiful.
That would depend upon how much water and food the person has with him/her. If it is in the middle of the summer in a hot desert you will need much more water than in a cool desert or in the winter. Generally, it is recommended that you have a minimum of one gallon per person per day. Even more would be safer. However, that is a lot of weight. Without sufficient water in a hot desert a person would start to experience severe health issues within a day and would expire within 2 or 3 days. Food is generally not a big issue as a person can go for weeks without food. However, the person would have little energy to move.
