At a literal level, what grows in Alice at the end of Chapter 5 is her neck, which becomes extraordinarily long.
`Come, my head's free at last!' said Alice in a tone of delight, which changed into alarm in another moment, when she found that her shoulders were nowhere to be found: all she could see, when she looked down, was an immense length of neck, which seemed to rise like a stalk out of a sea of green leaves that lay far below her.
Viewed more metaphorically, it could be argued that Alice has made some personal growth; she has gained control over her size, and therefore her circumstances, which makes her more stable and confident in the strange world she is inhabiting. Her mastery of the puzzling changes she is undergoing could be related to the idea of growing up.
