The stinkiest cheese, Époisses, is also the sweetest.

The stink is really a matter of culture and education.

It is not so much a stink as a wonderful aroma in anticipation of pleasure to come for connoisseurs.

It is also satisfying to many to know that cheese is a natural product made only from raw milk, rennet, cheese culture and salt. Its aging process can take over a year and as such, cheese represents the opposition to the industrial "fast food" or "junk food".

Cheese from pasteurized milk do not have this "stink", it may be a better option for you.
