Well, he doesn't have a "weakness" in the sense that Superman does, where you show him Kryptonite and you win. The Hulk is, however, just as vulnerable as a normal human being when it comes to adamantium bullets/blades, magic attacks, and hypnosis. He has to breathe, as well. You can still drown or suffocate him. Not to mention that if you get him mad at something else, you can escape him while he's distracted.
I guess if I had to pick one, I'd say his weakness is being Bruce Banner. If you can somehow revert him to that form (e.g. with magic or hypnosis) he's as frail as any other human.
