In the world of fiction, a canon is the body of work considered to be in-universe, or generally accepted as 'counting' toward defining that fictional reality.

With that in mind, an open canon is one in which almost anybody can submit a body of work and have it accepted, as long as it doesn't badly contradict that which has already been established. An example is the Star Wars universe, which actively solicits what they call fanon, fan-based canon, to flesh out its extensive history and scope.

A closed canon would be the opposite; for example, J. K. Rowling is very protective of the Harry Potter universe, and has actively sued those who try to profit from pastiches or rip-offs of it.
