The evil monkey is not actually evil on Family Guy. Check out the episode "Hannah Banana", and you will find out that the evil monkey is actually a friendly monkey who lost his job and house after his wife cheated on him. His religion is unknown, since it was never discussed. I think the creators of Family Guy are done with him now, but I cannot be sure until they either use him again, or Family Guy gets into too much legal trouble and gets cancelled.
