If the first pilot had sold, she would have continued to play Number One, but NBC was highly uncomfortable with a female 2-in-C on a space ship. How times had changed with Star Trek: Voyager.
You could probably consider Majel Barrett for this category. She was married to Gene Roddenberry and in his first pilot for the original series, she played the female first officer. She is the only person to have been on all five incarnations of Star Trek. She played Nurse Chapel in the original series, the Enterprise computer voice in Next Generation, Federation computer voice in Deep Space Nine, Voyager computer in Voyager, and Computer in Enterprise. She also played Lwaxana Troi, Deanna Troi's mother, in the Next Generation.

The empathic Betazoid counselor on the Enterprise-D was named Deanna Troi. She's the only reoccurring empath I can think of (though there were plenty of telepaths) besides her mother Lwaxana, who showed up a couple of times.

Councilor Deanna Trois is from Beta-Zed. Worf is presumably from Kronos but was raised for most of his childhood in Russia by adoptive human parents. I am not sure where Data was found.
