good question. Needs more research. Wasn't there 2 German planes in that movie? One was a biplane that the two Jones flew and then there were the two single-wing fighters that attacked them.
Historically, the Germans used bi-plane fighters prior to the start of WW2(which is the setting for this movie). One of the most well-known German biplane fighters was the Heinkel He-51. However, this as single-seat fighter and did not have a back-seat gunner.
Also, these a/c were not painted in camoflage or any dark colors. They were grey (aluminum dope) and they did have the red band painted on the tail with the swasika in the white circle. These bright colors were discontinued when they went to the war-time camoflage color scheme.
In fact, it is a blooper ; they used a Swiss Pilatus PC-7, which was not German and was constructed after the war. He looks like a bit of a Messerschmidt 109. See : http://fr.wikipedia.org/wiki/Pilatus_PC-7
