The great majority of New Zealand's electricity comes from Hydro electric plants. The largest of these is the Manapouri power scheme. About 10% of its electricity goes to the national grid, with the remainder going to the Aluminium smelter at Awarua, near Bluff.

The Huntly Station is mainly fired from coal and gas, and supplies about 1500MW.

Salt is produced in Lake Grassmere in the Marlborough region of the South Island. Though originally designed as a solar evaporating site, research soon showed that wind was the main evaporating principle, and re-design of the ponds to account for this allowed the production to increase several-fold.

There is a good article in wikipedia.
