They want to have the longest "opening weekend" possible, so they stretch it all the way from Wednesday through Sunday night. This inflates the opening weekend ticket sales, and makes the movie look more successful. Another reason is to spread out the rush of people. Serious fans will show up Wednesday and Thursday nights, and be out of the way of the regular weekend movie crowd.
