Why are movies usually different from the book their based on even though the books are sometimes better?

because some things in the book sound right when you read it, but sound totally wrong when you actually hear it. like in twilight, bella, the main character says, "you look beautiful" to the guy she likes when she sees him with diamond skin. but, in the movie, when you actually hear her say it, it just sounds extremely weird and dumb.
i hope this wasnt very confusing.
