If you want a more exact number you'll have to a lot of estimating. If the average time a slave would spend in Jabba's palace was about 5 years (due to the hutt's habit of killing or selling girls he grew tired of) and he had about 25 in his harem at a time, you can say he had about 25 new slaves every 5 years. He started keeping female slaves soon after he became leader of his clan at 80 years of age and he lived to be about 600, so that's 520 years of slave trading. With these numbers you can estimate that he owned about 2,600 slaves in his entire life time. This number might seem large but but considering his age and the life-span of some of his slaves it actually fits.

Salacious was eating from one of Jabba's food bowls. So when Jabba attempted to digest Salacious, Salacious let out his signature laugh that you here in ROTJ. As for what Jabba made Leia do while she was his slave besides what is shown in the film is not known. However, we can infer from what was done to other slaves, what orders Leia was forced to obey. In the comic "The One That Got Away" the twi'lek slave girl washes Jabba's body, feeds him, and is rented out to some of Jabba's guests. From this we get a better idea of what might have happened.
