Most Chinese people don't eat dogs. The minority who do eat dogs only eat it probably because they simply have nothing better to eat. In some places in China it is referred as a 'delicacy', which is very similar to other countries, for example, France with horse meat.

However, the reason why dog consumption has prominence in China is because, unlike the West, humans and dogs in China did not have such a comfortable relationship. Many people starved, and since they had nothing better to eat, dogs were eaten.

Similarly, the West did not have a super-comfortable relationship with cattle, unlike the Indians who frequently revere them as sacred (Hindus only).
