The donkeys act as herd guardians, protecting the cow herd from predators like coyotes, feral or loose dogs, wolves, bears and even cougars. Usually there's more than one donkey or mule in with the herd, since two is better than one when having to deal with a threat. Donkeys are usually used when the cowherd is calving out and there is a big population of predators around that could threaten the herd.
