In the old days discharging and loading of cargo was done by the ship's equipment, the small steam winch driving the ship's crane is called a donkey, that's were the name of the jacket "donkey jacket" comes from.

The (technically) correct term for the animal is "ass"; it is referred to as "donkey" for two reasons: to make the animal's name child-friendly, and to differentiate between wild and domestic creatures.

Donkey can mean something small - a donkey engine, for example - and a donkey jacket is a short coat. It might be from that.
