The simple answer is that the earth is close enough to the Sun to be within the gravity influence of the Sun. This Gravity influence is like a "rope" from the sun to the earth which keeps in in a circular path and also keeps it from pulling away from the sun.

The real reason is better explained in light of the Einstein theory of General Relativity. That implies that the mass of the Sun has caused a curvature in spacetime that the earth rides in, and as the earth tries to continue in a straight line this curvature of that spacetime keeps the earth speeding around the Sun in a continuous elliptical orbit.
