The character wasn't named in the original book of Pinnochio so it had to be named by the Disney writers. At the time when Pinnochio was made by Disney, "Jiminy Cricket" was a commonly used euphonism for "Jesus Christ". The phrase was used in Snow White and The Wizard of Oz and it seems an appropriate name for a cricket.
