First of all, the frozen form of water (ice) is less dense than the liquid form, so ice floats on water. This means that lakes and oceans can freeze from the top down, and all of the aquatic life underneath can survive. If water froze from the bottom up (which would happen if water were less dense than ice), then all of that life would die.

Plus, water has very strong inter molecular forces (due to the hydrogen bond), so it boils at a very high temperature. This controls the evaporation rate on Earth, so that all the water isn't stuck in vapor form.

Also, water is the "universal solvent." It is a polar molecule, and will dissolve almost any ionic salt and quite a few other polar molecules. Reactions are marked with the states of the reactants and products - (s) for solid, (l) for liquid, (g) for gas. Water is the vessel for these reactions, and without it, they would proceed slowly, if at all.
