This is just a guess, but perhaps it is because her character (Moaning Myrtle) was not necessary to the plot of the final movies (DH - parts 1 & 2).
The last time Myrtle was seen by Harry Potter was when she was ordered to leave the bathroom by Severus Snape. It is unknown whether she participated in The Battle of Hogwarts.
