Several of the changes are unexplainable. The only real explanation possible is that the colour either clashed with other prop colour choices, or the colour couldn't be picked up properly by the camera, or it simply looked better. The first is unlikely as they would change it around until it is perfect, the second is unlikely due to the brilliance of the technology, so the most likely possibility is the third option.
It is the only thing that is in color in the whole movie, the little girl's dress is red.
at the end of the movie, when they are dancing in the clouds, the last color that you can see the dress in is pink as the book is closing. But Aurora is always presented in blue, so i guess its a toss up

In Disney's Sleeping Beauty movie, the outfits of the fairy godmothers are as follows... Flora wore a pink/red/orange dress with a red pointed hat and cape. Eventually she changed to peasant like clothes which was a orange patched dress with a bright orange vest/shirt and a light orange a babushka (hair covering). Fauna wore a green dress with a green pointed hat and cape. Eventually she changed to peasant like clothes which was a green dress with a brown 'shirt' over it with a light brown apron, and a light brown babushka (hair covering). Merryweather wore a blue dress with a blue pointed hat and cape to begin with in the movie. Eventually she changed to peasant like clothes which was a blue dress, with a black make shift vest/corset, blue apron and a light blue babushka (hair covering).

I always thought of her in blue- that was the original gown color when the fairies were making her birthday dress (the one we see her in throughout most of the 2nd half of the movie) however DISNEY as a company sells her princess gown in pink- probably because the DISNEY Cinderella gown is sold in blue (which is actually white in the movie) i think they altered the colors when making the Princess dolls to show make a pretty color scheme visually. So, strictly for packaging purposes; Belle is Yellow, Jasmine is Purple, Ariel is Light Pink, Tiana (and Tinkerbell) is Green, Cinderella is Blue, and Aurora is Hot Pink- for your question though, I would say blue, going off the movie and not baby dolls.
