I don't see why not, there are some things you should know about "Birch", according to my books on wood, birch (yellow birch and paper birch) is a fairly hard wood has straight grain and a fine even texture, "but", it is not durable.

It glues well and excepts stains equally as well, and can be polished to a fine finish.

I would be remiss if I did not mention most Luthiers use Alder or Ash for their wood of choice.
