You could have a intake gasket leaking. You need to take it to your local mechanic, one that you can trust, have them pressure test you cooling system. Could also possibly be a head or head gasket leaking to the inside. You need to have it check asap.
There could be several reasons, including the radiator being plugged up, the thermostat being stuck, and the water pump not working. Drain the coolant, and check for signs of rust or corrosion in the coolant. Remove the thermostat, replace the coolant, and run the engine. If the problem persists, take it to garage. Troubleshooting by changing out parts will be too expensive. check and change thermostat if done this problem is either head gasket or cracked head

Go to the nearest parts store tell them make model and year and engine size and they can tell you. Parts store such as napa, carquest, autozone. 5w30, unless it is the 3.8L v-6 then its 10w30
It's not too difficult to find a leak if you can get the vehicle on a rack to look at it from underneath. And power steering hoses can be difficult to replace if you are not mechanically experienced and have the proper tools. Best to leave it to a mechanic.

You need to double check that coolant, white smoke is a sure sign of a blown head gasket, especially when added to an overheating issue.

Check that there is enough engine coolant. Check to insure that the thermostat is not stuck, and that the water pump is circulating. Turn on the heater on high and high fan. If the temp drops even for a bit this is an indication that the coolant isn't circulating properly and the thermostat or pump are bad.

Engine? 3.1L V6 are notorious for intake manifold gasket leaks. get it fixed soon or your engine is at risk. My Lumina had oil in coolant and coolant in oil. If there is tan foamy stuff on oil fill cap, coolant is in oil too.
well basically you need to fill your coolant system up I'm not familiar with Chevy's but refer to the car manual
