No, they didn't sell out. They simply matured as a band, became better musicians, and in a metal sense, became heavier. Slipknot wasw never hardcore. They've also been Heavy Metal, with several subgenres leading up into it. One thing is common, their songs are heavy on every album, and just because they've become more experimental, and have learned to make songs better, doesn't mean they sold out. Simply means they've become even more bad ass.
