When performing in front of an audience it helps to have a look. You could have really nice instruments (Prince), or perhaps matching clothes (Devo), or costumes (Kiss), at the very least you should wear a nice shirt because many people will be standing there looking at you.

A set list helps to alleviate the awkward long spaces in between songs while you figure out what to play next. You could entertain the crowd with your witty banter, but if you're not a comedian or a good story teller then you might want to just be quiet and play your music. If you insist on talking to the crowd, do not yell in to the mic. The mic is already amplified. Talk as if you are trying to connect to a single person. "G'night Cleveland!" is an overused cliche that was already mocked.

As far as music, it depends on what your goal is. You are the one driving the truck so you can take the audience where you want them to go. Just remember, it's a journey. You don't want any u-turns or bumps in the road unless that is the plan.

If the audience sees you having fun on stage then they will pick up on the vibe, and visa-versa until you are all in sync.
