Cherries will ripen if picked after they start to change color. You can place partilly ripe cherries in a bowl or paper bag at room temperature and they will ripen to a degree. We have used the technique on sweet and pie cherries as well as wild cherries. Of course they are not as sweet as cherries picked ripe on the tree but they are an improvement over cherries that you don't get at all because the birds ate them!

There seem to be two streams of thought on whether or not cherries will ripen after picking - either that they will not ripen any more or that they will ripen some.
