I'm trying to replace the headlight assembly for a 2000 Jeep Grand Cherokee Lerado. What bolts or screws do I remove
It is near the right front headlight. You have to remove the grill to access.
Undo the hex nut on top of the headlight assembly and remove bolt. Grap bottom front of headlight assemby and pull hard upwards causing the bottom pins to release then pull directly outwards to release the top pins. Turn back of globe anti clockwise to release globe from headlight assembly.
You do not need to remove wiper arms to replace the filter. Pull the rubber cowl weatherstrip outward to remove on the passenger side about halfway across toward the drive side. Remove the cowl grilled cover, it has plastic fasteners that does not need tools to remove. Start be pulling the end of the panel gently upward enough to pop the plastic fasteners up so you can remove them by hand. Be careful when pulling on the plastic fasteners as they could be very sharp on the edges. There will be an old plastic air inlet cover under that cowl grilled cover. You can either remove the plastic fasteners like above or you can cut the plastic rosebud fasteners. Clean the area and you are ready to install the new filter.
WJJEEPS.COM has a good write up on this but the short answer is the is a bolt that holds the headlight housing that you remove then gently pull the housing forward until it pop out of the clips.

Unlug the light harness, unscrew the plastic nuts, pull out the headlight. Reinstall new headlight, screw the plastic nuts back on and plug the light harness back into the the headlight housing.
Remove one screw and release the plastic holders. pull the light straight out.
Use the button on the dash to raise the headlights, remove the black plastic cover from around the headlight, unbolt the cover from the frame mechanism (IIRC).
You have to remove the entire headlight assembly. Glass cover clips on with plastic clips. Remove and install CAREFULLY as glass breaks easily.
you dont unless you glue it again, if wanting to replace head lights then, on top of headlight assembly there are 2 tabs to pull up. then remove assembly.
Open the hood. Remove the black plastic cover that goes across the top of the headlights/radiator. Remove the two silver screws that are on the top of the headlight assembly. Then remove the light housing...Not much holding them on.
Open your hood and remove the 2 push pins that connect the engine compartment plastic separator. There are also 2 bolts to remove and then you can pull the headlight from the frame. Replace the bulb and put the headlight back.
I have a 95 and I believe the headlight housings will be swapped out in the same manor. There are plastic covers under the hood that protect the back side and wiring of the headlights. You must remove these. Then you will see 3 circular plastic pieces with bolt ends protruding from them which are used to adjust the headlight direction. They will have metal clips that hold the plastic pieces in place. They each have 2 holes which need to be spread apart, this will allow you to pull up on the clips and remove them. Now you can remove the headlight housings.
open hood, remove the little plastic/rubber cover above each headlight, one will be right on top the other is just below behind the headlight.
