Beethoven and later composers started putting more emphasis on their own exact interpretation, writing more and more in the music extra instructions, such as crescendos, articulation, etc. Before that, there was a lot more improvisation. Sometimes composers didn't even give the performers all the notes, such giving organists a chord symbol allowing them to improvise in a similar way to jazz musicians today. Also, before musical notation, it is imagined that all musical performances were improvised in whole or in part.
