I am a pianist and teacher, and I like ivory for the reason it is textured. The texture allows a sense of "grip" of the finger on the key, which is quite nice compared to the more slippery plastic used in all pianos nowadays. I also suspect that the ivory is slightly porous, giving oils and sweat a place to go other than sit right on the surface of the keys. I wish there were a closer substitute to this experience that did not involve elephants or walruses, or any animals for that matter. It should be possible to emulate this if a piano maker were so inclined.
