I understand the word "death" here to refer to a dangerous situation which could produce death. This appears to be how the word is used in Ps. 23.4 and 2 Cor. 11.23. The number seven is often identified as a symbol of that which is perfect or full. Hence, it seems to me that the verse is simply saying that for the righteous, the journey that will ultimately take us from earth to heaven will be a well-spent one, even though it was full of dangerous situations of peril and testing that could have resulted in death. Concerning this, Pat Farish offered the following explanation: "The words of the song, 'The Sands of Time,' are wonderfully to the point. The author, describing the trek from earth to heaven, says, 'It were a well-spent journey, tho' sev'n death lay between….' As far as physical termination is concerned, '…it is appointed unto men once to die' (Hebrews 9:27), and we are pleased it is no more than 'once.' We do not usually view physical death with desire or delight, being occasioned as it often is by illness or injury, and always involving separation from loved ones; but the thrust of the song is, if we had to die SEVEN times, enroute to heaven, 'It were a well-spent journey'!"
