"Backing" in musical terms means the back-up singer, guitarist, bassists, drummer, etc. They are backing them up. It's like an extra additive to make the song/sound of the song get a certain feel or depth to it.

Youtube offers backing tracks of many many songs, the more popular the song, the more likely Youtube will have a backing track for it. Shine Jesus Shine is a fairly popular song and Youtube has its backing track uploaded as a video file.
