The second would be some type of slow movement in a binary form. The 3rd would often be a minuet and trio, followed by a closing movement in Sonata form again.

In simple definition, the form is the structure or plan of the music. In most cases, the composer sketches a skeleton of his music. Sonata is a form. So if a piece is in Sonata form, or Sonata-Allegro form, it has a certain layout. Usually it's in 3 movements, the first being a fast attention-getter; the second is usually slow and lyrical; the third is usually at a faster tempo than the first movement.
