I believe you can play them in any style but not everyone likes bluegrass with drums in it. :) Really it's a creativity thing, if you would like to play drums to a certain style do it and don't worry about if it's correct or not, it's music there is no right or wrong way to express yourself (please whoever is reading this don't make me reconsider changing my opinion by intentionally acting over-dramatic while playing your instrument). lol jk
Mutes change the sound from your instrument, for example making it more lyrical. The "hotel-room" style mutes are used to make the music quieter.
