The dictionary says:
1 the art or science of combining vocal or instrumental sounds (or both) to produce beauty of form, harmony, and expression of emotion : he devoted his life to music.
• the vocal or instrumental sound produced in this way : couples were dancing to the music | baroque music.
• a sound perceived as pleasingly harmonious : the background music of softly lapping water.
2 the written or printed signs representing such sound : Tony learned to read music.
• the score or scores of a musical composition or compositions : the music was open on a stand.

BUT!... I don't really agree. Music is really undefinable. No matter what conclusion you can come to about what music really is, you'll always find an example or two or three or a hundred of something that is music but doesn't fit into your definition. On a very basic level, it's an artist manipulation of sounds and/or silence that is usually brought about to invoke emotion.

Music can be created by doing anything really
Edgard Varese states "Music is organized sound". Music can be an instrument or vocal sounds that are combined to create a form of harmony and expression of emotion.
