The highest note a modern Flute can play is a high F. It is 2 octaves higher than the F written on top line of the staff. The fingering is your 2 middle fingers down along with the D# trill key, no thumb. This note isn't usually written except in very advanced music because it requires a very strong and precise air flow to produce the sound.

In common Oboe repertoire, you rarely ever see any note higher than G6, or the G three ledger lines above the staff, and even that G, and the F sharp below are extremely rare. One such example of a piece that goes up to G6 is the Saint-Saëns oboe sonata, and even then there is an optional simplified ossia.

You rarely see pieces that go above an E6 outside of the etude repertoire.

Despite this, it is possible to play notes even higher. These ludicrously high notes require immense breath support, very flexible embouchure, and often times complicated fingerings. Many of these fingerings may not work on every instrument. It is possible, albeit very difficult, to play up to a C7.

It is hard to say what the highest note an oboe can play is. It depends on the experience of the oboists, the quality of the reed and instrument.

The highest note for the oboe, at least in the text books, is the A two a half octaves above Middle C, or the note A 1,760 Hz. However, many good players can play harmonics above the standard range, which differs from player to player. That high A is usually a safe upper limit (but still hard to play).
