I can't answer the "why" exactly but I'm assuming you have the DVD in English (or was watching it in English), rather than Japanese like the original. With that being said Disney is in charge, to a large extent, with English voice actors, line changes so references make sense in English, and music. Quite a few hardcore Miyazaki fans have noticed this too and are upset with how much they change things, but that's how it is I suppose.

If you are playing the English version of the game, it is impossible for the voices to be heard due to a cutback of the English versions release. However, if you own the Japanese version, the voices should be defaulted so you can hear them, but they will not be in English and neither will the subtitles.
