The difference is volume is a perception thing as amplitude is a measureable contant. It has to to with air pressure, the more cycles of air pressure compression and decompression determians the pitch or note we hear and how great the air pressure is defines how loud we hear it and amplitude is a measurement of air pressure strength, which is related to volume.
