What is value of 100 year old reed pump organ made by Bell Organ Guelph Canada?

The price that someone will pay for it! This may depend on whether the buyer wants a decorative piece of furniture or whether he intends to play it. Is the instrument in working order? Is it in tune? Try advertising on the web with a photograph and see what offers you get.

What is the value of a late model 1800 Shipman pump Organ?

As much as someone will pay for it. Typically, a reed or "pump" organ in average playing condition is worth between $100-$500. This value varies depending on the case (wooden body of the organ) where simpler designs go for less and more ornate designs go for more. Also, the more stops (pull knobs which change the sound of an organ) the better. The basic organs have between 6-12 stops and some of the nicer ones have 16. If there is a problem with the bellows, reeds, or stops, then the value falls dramatically. You will see people on Ebay trying to sell their pump organs for ridiculous prices ($500-$3000!!) but if you search Ebay for the selling prices, you will see that none go for anything near that. Value is what the instrument is worth to you, or to someone willing to buy it.
