This may refer to the Great Speckled Bird found in Jeramiah 12:9. The bird represents the Church. Several recording artists have made records singing about the great speckled bird from the 1930s through the 1970s. On a less serious and probably more accurate note, chicken has been called the gospel bird because it's so popular at church dinners!
