Eschers skull in the eye reminds us of mortality. He is teasing us with the one who watches over all of us, the fate of each of us, death. There is no great expanse of life for us all, just the small time we have, constantly being watched by death just drawing nearer to our destinies. In fact Escher is an illusion artist, so the picture is therefore an illusion- you are looking into the eye of someone and seeing write through to their skull which is obviously impossible so forth creating the illusion.
Means you remember everything, down to the last detail. As if you have a photograph of the situation that you can look on to pick out details.
