I believe (from my interpretation of the lyrics to "I Wish I Was A Girl") that Elisabeth is a former girlfriend who believed that Adam was cheating on her while he was out on tour, and it lead to the dissolution of their relationship. (Which is why he wishes he were a girl, because she would believe him if he were one of her girl-friends.) I don't know other songs she is mentioned in very well though, like Goodnight Elisabeth.
