Because they are very good pianos .... and are much more affordable than many of the good europian companies. (rubbish !)
Musicians prefer to use Steinway pianos, because of the range of sounds that they give out ... in conjunction with the touch and tone. Steinway do not compromise on their build, and every design feature is there to enhance and get the absolute most out of the piano.
Put yourself in the shoes of the concert pianist, who ... whenever they are on stage want to 'shine' as best as possible, therefore they want the best tool to use.

Compared to what? Most of them were of average quality intended for home use. No obvious problems but just adequate musical instruments. If you're buying for casual use or kids' lessons it will probably be fine but you may want to have a piano technician look at it to make sure it doesn't have any problems severe enough to make it unusable for your purposes.
