Pop Rocks are essentially hard candy (like Jolly Ranchers and Livesavers) mixed with an unusual ingredient: carbon dioxide.

In normal hard candies, a sugary syrup is mixed, boiled, then allowed to cool and harden. In Pop Rocks, the boiled syrup is mixed again, this time with pressurized Co2, leaving air bubbles in the finished candy. When you eat Pop Rocks, the sugar dissolves in the heat of your mouth, popping the air bubbles and releasing the Co2 gas. This creates the unique Pop Rocks "fizzing" sensation.
