It depends on the type of music you want to record. Modern MIDI equipment usually comes with a USB connection that will plug into the Macs USB sockets. Older MIDI equipment will require a MIDI to USB adapter to pass the MIDI signals to the Mac. Microphones are also available with a USB connection. This question is incredibly broad. Dozens and dozens of technology types can be used to improve the recording, editing, timbres, sonorities etc. of music. Probably one of the most common is MIDI technology, which allows you to build tunes with a limited set of instruments to play on any system that has a MIDI interpreter. And that's just software you can download.
Use your audio editor and choose Save As. You can convert audio files into other forms, but MIDI files cannot be converted to audio files.
Not per say... There is some software that does this, but it is not easy to do. MIDI is what you get when you take the music recorded from each instrument and put each instrument into a track. The tracks are then put together in one list and from there they can be played separately, muted, deleted, etc. When you have an mp3 or ogg or any file type, they take all of those tracks, or channels, and mash them into two channels, left and right. If you have a solo, it will be easier for the software to "see" the notes and make the MIDI for, but if you have many instruments playing at once, it will be very confusing for the software.
The main type of connection to equipment is with an electrical lug. It is about a 50 - 50 split as to whether the manufacturer supplies the connection lug or the customer has to supply the lug.
