Horses and donkeys have different numbers of chromosomes, so mules wind up with an odd number of chromosomes (32 from one parent and 31 from the other). This messes up the genetic machinery that makes sperm and egg cells. It's sort of like making copies on a bad copy machine: you might be able to read a copy of a clean original, but a copy of that copy is usually illegible.
