Think about why icebergs float, then work out what will happen to the water in the bottle as it freezes (in fact, as it passes below about 4C).
Foil
Standard aluminum foil is typically around 0.016 mm thick.
The rate at which water freezes depends on the thermal conductivity of the container. Plastic is generally not very thermally conductive, whereas aluminum foil is more thermally conductive. Thus, as long as the foil is not very much thinner than the plastic, the water will freeze faster in the foil.
Aluminum foil will not change color when submerged in water. Aluminum is a stable metal that does not undergo significant chemical reactions in water. However, if the water contains certain chemicals or impurities, it may cause some discoloration on the surface of the foil due to oxidation or reaction with the impurities.
Some people do and some don't. The taste and texture ('bite') will be different.

The aluminium foil is so thin that heat would soon pass through it. The shiny surface would reflect some heat back to the bottle. If the bottle and foil was wrapped in an insulating material (thick cardboard, bath towel, newspaper, etc.) then the bottle would retain more of the heat

Between Saran Wrap and foil, I would choose foil. But the best thing to use are freezer bags.
