There are different modes of eruption. Composite volcanoes are best known for explosive eruptions that send out plumes of ash, gas, and pumice. At other times they send out lava flows which may not resemble the typical conception of a lava flow. And still at other times a composite volcano can produce lava viscous enough that it builds into a dome rather than flowing away.
In very large explosive eruptions composite volcanoes can collapse in on themselves, forming a large crater called a caldera.
